Creme vichyssoise med löjromstoast ca 1,5 lit
1 purjolök, den vita delen
3 stora potatisar
1 lit kycklingbuljong
5 dl grädde
vitpeppar från kvarn
salt
1 knivsudd riven muskot
löjrom efter behag och plånbok
smörstekta toastar att servera till
smör att steka i
gräslök till garnering
1. Strimla purjolöken fint och skölj väl. Skala potatisarna och skär i små kuber.
2. Fräs löken i smör utan att den tar färg. När löken börjar mjukna så tillsätt potatisen och fräs ytterligare några minuter.
3. Slå på kycklingbuljongen och låt koka tills potatis och lök börjar falla sönder. Krydda med salt och vitpeppar.
4. Mixa soppan lite i taget, mycket noga. Slå tillbaks i kastrullen. Tillsätt grädden under omrörning, koka upp och låt sjuda ca 5 minuter. Smaka av med salt och peppar. Späd ev med ytterligare buljong om soppan känns tjock.
5. Sila och slå upp i en bunke och rör soppan kall över isbad. Täck med plastfolie och förvara kallt.
6. Stek små toastar i smör och lägg små löjromsägg ovanpå. Placera toastarna med löjrom i djupa tallrikar och slå sedan den kalla soppan runt om. Garnera med finhackad gräslök.
7. Servera väl kylt med ett glas vit bourgogne vid sidan, tex ett glas Clotilde Devenne Bourgogne Blanc 2011.
